If you are chef, especially you fancy japanese cuisine, then the deep knowledge inside the book will help you to understand many japanese ingredients and techniques they use on daily basis. And many recipes too.

A gem!
Great book! Well illustrated, clear, answered several questions I’ve looked for answers to everywhere (how to prepare and use whole katsuobushi for one...). A real treat. Highly recommended. Technicial, but that’s what I was looking for.

I am very disappointed as I book as new but it came with the corners and cover page damaged as if it was second hand!!! see the pictures
